MikMod is a MOD player capable of saving its output to a raw WAV file. It's an ugly text-mode program though, and they only offer source code as a download.
There's always the 3D0 music, if you don't care about having exact copies of the PC MODs.
That is because the race themes are in .mod format which is like an advanced MIDI with its own "instruments" in the file instead of just a general instrument patch.
It seems PNF hasn't their mp3 conversions anymore, hmm.

You can always run the game files through a file converter. I use Prism myself. Another trick is an audio patch cable linked between the microphone and headphone jacks (This is how I often record music out of video games for m show. )

Not really necessary when all you have to do is download Mod Plug Tracker import the files and "Export .WAV". Takes seconds for each file, the hard part is encoding them into a usable format and then tagging them.
