Hello,
I am exploring all the planets close by first for resourses that don't require insane flying skills to gather the resources. i venture into ilwrath space. Here I meet the ilwrath ships. Is there any way I could beat them easily using either the zoq, earthling, spathi or orz ships?

Any of those ships can defeat an Ilwrath, but the Earthling is going to be torn down as often as it wins those battles. The other three ships are fast enough to stay away from the Avenger indefinately, so you can use any of them. You can't see the Avenger, but your ship's scanners do have a vague idea where they are so the camera centers on the area directly between you and your opponent. Don't get too close to them and fire backwards at where you think they might be with either the Spathi BUTT missile or the reverse Orz cannon.
Add: Fighting Ilwrath is very long and tedious, so don't engage every Avenger you see even if you can kill every last one of them.

One trick is to take advantage of the screen centering. Note that if you are facing the middle of the screen (exactly) then you are facing the Ilwrath. There are twelve directions you can face, so there are twelve lines on the screen along which you can lie and shoot back in the sure knowledge that the Avenger is in your line of fire. Do not fire when not on one of these lines. The easiest are the vertical and horizontal center lines of the screen. With this knowledge, the Orz especially can rip Ilwrath to pieces without ever taking a hit. Spathi can too, but it is much more time consuming.

if your ship is fast you can go around every planet mine and run away from ilwrath and go the next planet in the system and go to all star systems and do the same thing why fight them i just talk to them for awhile and if i have to fight them i press the run away button

the zot fot pik can be the earliest sure bet in the game. there tiny gun may not pack a punch, but it spreads out, to cover a large area. just use the above tacticts and this ship and im sure you'll be toasting spiders without a problem. ~DEFIANT

What? Why not? I LOVE doing that! It's great fun, and gets you mucho resources. Plus, "sweeping" a system of those buggers is fun, and you get to have all kinds of amusing conversations before the battle!
Of course, I do this with my hyped-up Precursor ship, which has a very nice combination that I've found: 4 Shiva Furnaces, 3 Dynamo Modules, 2 high-capacity fuel tanks, and a partridge in a pear tree...err, I mean, a Hellbore in the forward firing position. :-) The combination of 4 furnaces (greater amount of energy regained per recharge) and 3 dynamos (faster rate of recharge) means the ship can fire pretty much continuously, as long as I don't use the point-defense lasers as well. And against Ilwrath, that's hardly necessary. The continuous stream of Hellbore shots does quite a number on anything, though...going "Kohr-Ah hunting" in the Crateris region is a sport I enjoy muchly. Losing a few blasts to the FRIED is hardly a concern when you can fire a continuous stream, and they go right through the spinning disks.
Well, to keep this from being completely off topic, the Orz and Spathi are, as mentioned above, great ships to take out Ilwrath with. The Thraddash is also nice, since you can lay a thick trail of flame in front of the cloaked ship, which will usually just steer right through it. Don't get close enough to tempt the Ilwrath to decloak, though, the Avenger's flame blast will eat through the afterburner jets in no time (as well as torching the Torch, if you're in range). Oh, and in Super-Melee, the Chenjesu Broodhome is quite effective. Don't bother with DOGIs, just fire crystals at the most like place, and let them fragment if they don't hit directly. You'll find the Avenger's location pretty quick, and then...TOASTY! Oh, wait, that's a different game.

Well, I personally go for the Zoq-Fot-Pik in this case. The other ships can be potentially faster at killing the Ilwrath, but the ZFP is probably the easiest.
First of all, realize this: the Ilwrath Avenger is slow as a no-legged hedgehog in a bucket of molasses compared to your ZFP ship. You can easily outmaneuver it. Just make sure you don't get into range of its Hellfire cannon and you're fine... and since you can outmaneuver it so easily, that shouldn't be a huge problem unless you run into an unexpected planet or asteroid or something.
Next, as already stated, you can estimate the Ilwrath position - it's always in the opposite position relative to yours on the screen.
The ZFP secondary attack is useless against the Ilwrath due to its short range, but the primary gun works wonders. Although you can estimate the Ilwrath position, it can still be difficult to get the position exactly right. However, the ZFP primary gun fires a SPREAD of shots, so you just aim in the generally right direction and let rip. Keep thrusting and changing course occasionally to make sure you don't drift out of or into range, and you'll be able to slowly rip the Ilwrath apart without ever being hit yourself.
Yeah, it's slow, but it works fine for me.

Say, it's been a while since I played SC1, 2 and 3, but couldn't you see the cloaked ships fly by watching the stars in the background? I know it's not a really fast way to get at them, but if you're desperate to get that last shot in it's a nice way of localizing them...

Once again -- shoot only straight toward the exact center of the screen. If you can't shoot straight at the center of the screen because it doesn't line up right, line yourself up before firing. If you need to, pause the game when there are two visible ships on screen and tape a little line across directly between them. Then repeat with a different direction. The intersection of these two lines is where you need to aim (and that's true in general, if your opponent is not fast).
