Listen up, I have a very interesting question for you all.

Who or what is Professor Zorg, and what is he professor of? Furthermore, why is he smoking a pipe?

Professor Zorg is the curator of the Xenosciences Wing of the Galactic Data Repository.  His doctoral dissertation, "The Function of Superfluous Eyestalks in Species that have a Large, Complex Central Eye" set the Melnorme and VUX scientific community ablaze with its.. insight (badump).

He is, of course, one of the foremost authorities on galactic etiquette as well. He has been published, after all.

Fair enough, but there is one last question nobody has answered. Why is he smoking a pipe?

I'd be quite inclined to think it relates to this or one of its derivatives.

Or just because it looks "professorly" and was one of very few and  successful ways to convey that mental image in non-human.

It doesn't really look as if it is smoking a pipe but rather there is a pipe like object growing out of its face.
I don't see any smoke so it must be for show.

Maybe it is a really strange tusk?  It does seem to attach to his teeth, in 8 bit glory.. he might have an upturned shovel tusk, for digging up delicious roots or fending off rival professors when getting coffee or graduate students?

8 bit glory

8 bit? I'm not sure what you mean here. You mean colors? Because it seems the original image is in fewer colors than 8 million. Heck, it seems like it's in monochrome.

Or do you mean the word size of the console it's on? because that in many cases would be 16-bit, not 8-bit. MS-DOS, probably the most important platform Star Control was for, ran on 16-bit processors, not 8-bit ones.
